Ingredients 1 1/4 cups of white rice - rinsed and drained 2 cups of milk - (whole, soy, almond, your favorite) 1 1/2 cups of water 1 can of sweetened condensed milk 1/2 teaspoon of sea salt 1 teaspoon of vanilla 1 teaspoon of cinnamon Instructions Place the rice in a strainer, or mesh colander, and rinse well allowing the water to run over it for about a minute. Drain, and place the rice in the Instant Pot. Add the milk, water, salt, and cinnamon, and stir well. Place the lid on the Instant Pot, and make sure the pressure valve is set to 'SEALING'. Press the 'PORRIDGE' button, and start, and allow the Instant Pot to automatically build and release the pressure. It will cook for about 20 minutes, and then release pressure for about 15 minutes. After 15 minutes, carefully turn the pressure valve to 'VENTING', and make sure all the pressure is released and the flow valve is all the way down, and remove the lid. Add the sweetened condensed milk, and vanilla, and stir until blended. Serve immediately, or place rice pudding in a dish, or individual serving dishes, cover with plastic wrap, and refrigerate until desired time to serve. Enjoy! Notes NOTE: You can add Nutmeg, raisins, coconut, maple syrup, strawberries, raspberries, blueberries, nuts, or other desired ingredients. Just add them when you stir in the sweetened condensed milk and vanilla.
